They did address Walt's size - by purposely trying to make him appear smaller - all his scenes in the finale  were shot in such an angle as to make him appear smaller - for the show, Walt did not grow - we know he grew, but they tried to minimize (pun intended) his growth because it wasn't part of the storyline.  Adding it to the storyline, would be doing what most of the complainers are complaining about - that is, changing the show on the fly.

The producers have stated that they knew from the beginning that the actor would grow over the course of the series, and that they have taken that into account, and it will be explained in the story.  They specifically said "trust them, they have a plan" and they had that plan from the beginning.
